What's the opposite of the wintertime blues? Hint: it's super sweet and pink! Slide over Jack Frost, I'm feeling tropical! This week the hubs and I are gearing up for an exotic trip to Costa Rica, and all I've got on my mind is mangos, pineapples, coconuts, and sunshine! I'll probably be on a bit of a digital detox, but I wanted to leave you all with quick and simple, something-sweet before we jet-set!

Mango Mania

The mangos at the supermarket have been surprisingly good lately for the middle of winter, so I've been going through them like crazy, slicing and dicing them on salads and throwing them into smoothies. A few days ago I was experimenting and whipped up my absolute favorite fruit smoothie recipe to-date! Adding a scoop of Garden of Life raw protein powder and a dash of hemp, chia, and flax seed will keep you feeling full and satisfied, and it also makes the perfect pre- or post-workout smoothie!

Tropical Mango-Berry Protein Smoothie

raw, vegan, dairy-free, gluten-free, soy-free, nutrient-packed

ingredients:

  • whole mango, cut up

  • 1 cup frozen raspberries

  • 2 ripe, frozen bananas

  • 1/2 cup pineapple

  • 1 scoop Garden of Life raw vanilla protein

  • 1 cup almond milk

  • 1/2 cup coconut water

  • 1 teaspoon hemp, chia, and/or flax

method:

  1. Place all ingredients in a high speed blender and blend until smooth.

  2. Pour into two glasses and cheers...or better yet, enjoy all to yourself! You can also try freezing half for later for a delicious slushy snack!

Au Revoir!

I'm looking forward to taking pictures of the local wildlife, tropical produce, and stunning scenery. We will be staying off the beaten path about 20 minutes away from a small village, which means no Whole Foods! hah! I'm a little nervous about getting out of my comfort zone and roughing it a bit, but it will be an experience worth sharing!

The true test isn't how well you manage when you're completely comfortable, but how well you can adapt and fare in an ever-changing environment!
