No Tricks, Just Treats!
I'm almost out the door about to get in one last easy run before the hubs and I hit the pavement for the Good Life Halfsy half marathon tomorrow morning! But before that, I just wanted to wish everyone a Happy (and Healthy) Halloween by sharing my festive Candycorn Smoothie recipe and a couple of other fun plant-based treats that are sure to satisfy your sweet tooth without rotting your teeth! Enjoy!
Candycorn Smoothie Recipe
refined-sugar-free, gluten-free, dairy-free
Yellow Layer
1/2 cup frozen mango
1/2 cup pineapple
Orange Layer
one carrot
one mandarin orange
White Layer
young coconut water
young coconut meat
Place the ingredients for each layer separately into your high-speed blender. Pour the yellow layer into a cup and place in the freezer for about 15 minutes. Place the other two layers in separate cups and store temporarily in the refrigerator. After 15 minutes, stir and pour the orange layer on top of the yellow, and freeze again for about 15 minutes. Finally, drizzle the creamy, rich coconut layer on top, and place in the freezer one more time. After 15 more minutes, take your smoothie out of the freezer and let it thaw for a few minutes before digging in! Happy Halloween!

If you're serious about going plant-based and cutting out refined sugars, these tasty treats are sure to satisfy your sweet tooth! Pictured above along with my Candycorn Smoothie is my Kiwi-Pomegranate Monster, my Sweet Orange Bell Pepper Jack-o-Lantern filled with Spiralized Zucchini Worms, my Mandarin Orange Pumpkin with a celery stem, and last but not least, Banana Ghosts with cacao nib eyes and blueberry mouths! BOO!
When all else fails, don't beat yourself up on Halloween if you still want to reach for the candy! My advice is to go for dark chocolate, because it's full of antioxidants and lower in sugar! Have a Happy Healthy Halloween!
